As the food got more enjoyable and challenging to the palette, I switched to wine, more specifically the Le Clarence de Haut-Brion 2011.

The avocado is halved, and the mousse, a perfect sphere of velvety decadence, is placed within one half, creating a delightful interplay of textures that belies the simplicity of the dish’s appearance.
